My Slovak heritage is part of the reason why I love to cook and eat duck.  Roasted duck is one of the classic dishes in the cuisine of both the Czech Republic and Slovakia (formerly Czechoslovakia).  So it was with great anticipation that I awaited the arrival of Nueske's Smoked Duck Breasts to taste and test in recipes.  Knowing Nueske's reputation for using top quality meats and poultry for all of their applewood smoked products, I had no doubt that the taste of the smoked duck breasts would be superb.

To do justice to the tender and sweet-smoky taste of the duck breast using mere culinary adjectives is simply not good enough.  Only your taste buds will confirm what I'm saying.  As a frequent visitor to my website, you are always assured that I only recommend food, kitchenware, cookbooks etc. that I have personally endorse. So you can trust that when I say Nueske's Smoked Duck will turn a simple salad into the most elegant meal, I definitely mean what I say!

The July Salad of the Month recipe featured Nueske's smoked duck breast and it is posted below. I will be posting  additional recipes featuring Nueske's smoked duck as they are developed and tested. 

Storage & Preparation Instructions for Nueske's Smoked Duck

To Store: The duck breasts are shipped packed in a stryofoam box with cold packs. Transfer duck breast to the refrigerator where, the cryovac unopened duck breast will keep for 2 weeks in your refrigerator or up to 3 months in freezer with no loss of flavor: Once opened, enjoy within 1 week.

To Serve: Duck breasts are cured, smoked, fully cooked and ready to serve, warm or cold. Remove cryovac packaging before slicing or gently heating. The duck breast meat is pink due to the smoking process. To maintain maximum moistness, Nueske's recommends not over heating the duck. However, if you prefer to gently warm it, pre-heat oven to 325°F. and place duck breast in a small roasting pan, add 1/4 cup water, cover tightly with foil and place on oven rack. Warm approximately 15 minutes or to an internal temperature of 120°F.

 

     
     
 

SMOKED DUCK BREAST, GREEN BEANS and ARTICHOKE HEARTS

1 Nueske's Smoked Duck Breast
Assorted salad greens to serve four
2 tree ripened (local if possible) peaches
20 pieces Trader Joe's frozen artichoke hearts
24 pieces Trader Joe's frozen French Green Beans
1 large Red Bell Pepper, flesh cut into thin strips
¼ cup oil cured black olives, pitted and coarsely chopped
DRESSING:
2 Tablespoons Sherry Vinegar
2 Tablespoons peach or apricot jam
½ cup Extra Virgin Olive Oil
salt & freshly ground black pepper

1.  Slice smoked duck breast into thin slices on the diagonal.

2.  Wash and dry salad greens, wrap in paper towel and refrigerate until ready to assemble salad.

3.  Cut peaches into thin wedges (see photo above).

3.  In rapidly boiling water, cook the Trader Joe's Frozen Artichoke Hearts and French Green Beans for one minute.  Drain well and dry on paper towel. 

4.  In a small bowl, whisk the sherry vinegar and the jam until combined.  Slowly add the olive oil while whisking, tasting occasionally, and adding more olive oil as it suits your taste.  Add a pinch of kosher or sea salt and freshly ground black pepper.  Whisk dressing and taste again - adjust with additional seasoning if desired.

5. Place chilled salad greens, peach wedges, artichokes, green beans, red pepper strips and olives in a large mixing bowl.  Toss the salad with the dressing, adding it one tablespoon at a time to ensure that you do not over-dress the salad.  Divide the salad onto four chilled dinner size plates and arrange an equal number of a duck slices on each serving.

Yield: 4 servings

These delicious chops weigh in at 7-8 oz. each and are cut approximately 3/4-inches thick.  They're sugar cured with a Nueske family blend of natural spices...but you'll just have to taste them yourself!  Simply put them on a hot grill for just a few minutes on each side and they're ready to eat.  A stovetop grill pan works very well if you're an apartment-dweller like I am!
