AVOCADO SOUP
Garnish: Additional plain yogurt, chopped chives and chopped cilantro. Boost the flavor by drizzling a garlic infused olive oil such as Olave shown above over each serving. Method Using a blender or food processor, process all ingredients until smooth. If mixture is too thick you can thin it with additional chicken stock. Taste for seasoning and add additional Garam Masala, salt & pepper as desired. Transfer soup to another container, cover and chill for several hours or overnight. before serving, taste soup again and adjust the seasoning as chilling can diminish the flavors. Garnish each serving with a dollop of yogurt and sprinkle with chopped chives and cilantro and a drizzle of garlic infused Olave extra virgin olive oil.. Yield: 6 cups
