BEAN CURD WITH SPINACH

In honor of the Chinese Lunar New Year 4706 - the Year of the Rat, celebrated by Chinese all over the planet beginning on February 7th for fifteen days, the soup  this month is Mandarin Chinese and the taste of Shanghai will be reflected in the salad of the month.

     
 

3 handfuls fresh baby spinach, rinsed, stems removed
3 scallions, sliced diagonally into thin slices
2 blocks of firm bean curd, cut into one inch cubes
2 tablespoons finely chopped pork fat
4 cups strong chicken broth
2 teaspoons sesame oil

1. Prepare all ingredients as directed.

2.  Render the pork fat in a 4 quart size saucepan and fry until browned.  Drain rendered fat and discard.  Add water and chicken broth to the browned pork fat.

3. Bring mixture to a boil; lower heat to medium and add bean curd cubes, spinach and scallions.  Cook for 1 to 2 minutes.  Remove pot from heat and stir in sesame oil.
