Here's an easy way to make chicken salad at a moment's notice! As long as your local supermarket has a rotisserie and sells deliciously marinated and roasted chickens - I've seen some stores also selling rotisserie duck which is divine. 

I've had rotisserie chickens from lots of different food stores, but recently, I had a rotisserie chicken from Costco - from one of their locations in Honolulu.  I can only hope that they use the same method and recipe for their stores nationwide!  It was delicious.

So next time you're stuck for a dish to bring to a picnic or other summer gathering, look no further than your supermarkets' rotisserie chickens!

     
     
     

ROTISSERIE CHICKEN SALAD

1 whole cooked rotisserie chicken
2 cups halved seedless red or green grapes
5 scallions, green and white parts, chopped
1 cup coarsely chopped nuts (walnuts or pecans)
½ cup Newman's Own Ranch Dressing
  Butter Lettuce leaves
  Sprigs of fresh dill

1.  Remove the skin from the rotisserie chicken and control the instinct to eat it!

2.  Remove the white and dark meat from the bones and shred or cut into bite size pieces and place in a mixing bowl to cool.

3.  Mix in the halved grapes, chopped scallion and nuts and toss lightly. 

4.  Add 1½ cup of Newman's Own Ranch dressing - toss to coat the chicken.  Taste the salad to determine if you would like more dressing and add accordingly.

5.  To serve, scoop a portion of the chicken salad into a leaf of butter lettuce (aka Boston lettuce) or enjoy the chicken salad as a sandwich on your favorite bread.
