Nonstick cookware has certainly come a long way since those first pans whose nonstick surface often came peeling off after some use.  Or, in the case of my British father-in-law, who literally scrubbed off all of the non-stick material from a skillet with a steel wool pad thinking that his wife had burned something in it!

Thank goodness the era of nonstick cookware surfaces peeling off with the slightest touch are long gone, and, despite the controversy that appears in the media from time to time about the potential health hazards of cooking on nonstick cookware, sales of the better quality name brand non-stick pans have certainly not been affected very much.  Having said that, there are a few general ideas to keep in mind when using any brand of nonstick cookware - and I would just stay away from the lesser known brands.

1.  don't leave an empty nonstick pan on the heat source for too long before adding food to cook in it.

2.  don't place a non-stick skillet or fry pan too close to the heat source under a broiler - when I do this to brown the top of a frittata I place the pan at least 6-inches from the heat source and for as long as it takes to lightly brown the food.

3.  don't use a non-stick aerosol oil spray product on any non-stick cookware.  It is difficult to completely clean off the spray on oil and therefore can build up on the nonstick surface of your nonstick skillet and over time, food will begin to stick! Instead, use a small amount of real vegetable oil to lightly coat the surface of a nonstick skillet using a silicone or other pastry brush or even wiping the oil on the pan surface with a piece of paper towel.
